Makes approximately 6 patties
2-1/2c Quinoa (fully cooked)
1/4c Roasted Red Bell Peppers (small diced)
1/4c Roasted Zucchini (small diced)
1/4c Roasted Yellow Squash (small diced)
1/4c Roasted Red Onion (small diced)
1/4t Garlic Powder
1/4t Chipotle Powder
1/4t Dried Chives
1/2t Sea Salt
1/8t Black Pepper
6 ea Gluten-free Burger Buns
Sliced Red Onion
Sliced Tomato
Sliced Avocado
Spicy Chipotle Mayo

Preheat oven to 375F
In a large mixing bowl mix quinoa vegetables and seasonings. Taste to adjust seasonings. Shape your patty size and transfer to a non-stick baking sheet.
Bake for approximately 15-20 minutes depending on the thickness of your quinoa patty. Be sure a golden brown crust has formed around the patty before you remove them from the oven. Serve on a gluten-free burger bun with sliced onions, tomatoes, avocados and spicy chipotle mayo. Skewer the top and serve.
