Creamy Raw Vegan Alfredo Zoodles

Zoodles are probably the best go to option for quick raw vegan meal ideas. This quick and easy creamy vegan alfredo sauce has just a few simple ingredients that brings this dish to life.

Makes 2 Serving Prep Time 15 minutes

2ea Zucchini (large, spiraled into noodles)

2/3c Cashews (soaked, plus 2/3c soaking liquid)

1/2t Garlic 

1c Spinach (fresh, massaged)

3T Hemp Seeds (divided)

Basil (garnish)

Sea Salt tt

In a high speed blender, blend cashews and garlic until smooth. In mixing bowl add zoodles, cashew cream, spinach, and 2 tablespoons hemp seeds. Toss until noodles become completely coated with cream. Season with sea salt to taste. Plate the zoodles and top with remaining hemp seeds and basil garnish. Serve.
